Golden Salami’s handcrafted Salami is created in beautiful sunny Golden Bay using carefully selected ingredients and a traditional European slow cure method.

All the Salami is:
 
  • Nitrite free
  • Naturally cured and fermented
  • Naturally wood smoked
  • Without artificial colouring & preservatives
  • Free of growth hormones
  • GE free
  • Wheat and gluten free
  • Produced in a "‘nut free"’ factory 
  • Contains either brandy or locally sourced wine

Salami is a dry sausage which doesn’t need refrigerating. Left unopened in its vacuum pack it will last indefinitely, making an excellent emergency food. Once opened it lasts for several weeks, if you able to resist the temptation!

The tangy European flavour is achieved by a time honoured slow curing method lasting six to eight weeks. Meat, spices and herbs, alcohol, salt, sugar, lactose, vitamin C and fermentation initiator are minced, encased, wood smoked and cured; all in a controlled environment.

Based on traditional European recipes the uniquely New Zealand Salami is batch made in four different flavours. The local place names given to the varieties reflect the Climpson families love of Golden Bay.

Golden Salami is drier than mass produced versions, is fermented traditionally and naturally smoked. It will continue to dry and mature after opening. The salami may be stored in a cool dry place, or in the fridge.

Golden Salami may be purchased by mail order; with delivery throughout New Zealand. Alternatively you are welcome to purchase from our road side "Salami Shack" in Golden Bay.
